Secret Veggie Nachos

Gluten free & vegan secret veggie nacho recipe created by me below.


Ingredients:

Cheese sauce: ~ 1 large potato, peeled & chopped

~ 2 large carrots, peeled & chopped

~ 1 tsp soy sauce

~ 1 garlic clove or 1/2 tsp garlic powder

~ 1 tsp onion powder

~ 1/2 tsp smoked paprika

~ 1/2 tsp miso paste (or sub. salt)

~ 1/8 tsp turmeric

~ 1/4 cup nutritional yeast flakes

~ 1/4 cup plant-based milk (I love @ organic)


Meat sauce:

~ 1 tbsp sustainable vegetable oil

~ 400g plant-based mince

~ 350g tomato sauce/passata

~ 1/2 tsp chilli powder

~ 1/2 tsp cumin

~ 1/4 tsp smoked paprika

~ 1/4 tsp garlic powder

~ 1/4 tsp onion powder

~ 1/4 tsp salt

~ 1/4 tsp pepper


Guacamole:

~ 3 avocados, peeled & pitted

~ 1 tomato, finely diced

~ 1 small red onion, finely diced

~ Juice from 1 lime (2 tbsp)


Sour cream:

~ 1 cup plant-based Greek-style yogurt

~ Juice from 1/2 lemon (1 tbsp)

~ Corn chips

~ Salsa, to serve

~ Cilantro, to garnish

~ Spring onion, thinly sliced, to garnish


Directions:

  1. Add potato & carrot to pot of boiling water & cook until tender, about 15 minutes.

  2. Meanwhile, make the meat sauce by heating oil in a large frying pan, add mince & cook for 10 minutes until brown. Stir in remaining meat sauce ingredients & simmer for additional 5 minutes until thickened.

  3. Make the guacamole by mashing the avocado in a bowl, then stirring in tomato, red onion & lime juice.

  4. Make the sour cream by mixing together yogurt & lemon juice in a bowl.

  5. When potatoes & carrots are cooked, add to high powered blender or food processor with remaining cheese sauce ingredients & blend until smooth (at least 1 minute).

  6. Pile corn chips on a plate, top with meat sauce & cheese sauce, serve with guacamole, sour cream & salsa, garnish with spring onion & cilantro.
