Gluten free & vegan pepita mayo, recipe below.
Vegan Pepita Mayo
Ingredients:
~ 1 cup pepitas (hulled pumpkin seeds)
~ 1/3 cup water
~ 1 tbsp cider vinegar
~ 1 tbsp lemon juice
~ 1 tsp wholegrain Dijon mustard
~ 1/2 tsp onion granules/powder
~ 1/2 tsp sea salt
Directions:
Add pepitas to a high powered blender & pulse until flour-like consistency is reached. Add remaining ingredients & blend until smooth.
Vegan Coleslaw
Ingredients:
~ 6 carrots, peeled & grated*
~ 1 small white cabbage, thinly sliced*
~ 2 small red apples, cored & cut into matchsticks*
~ 3 tbsp cider vinegar
~ 1 tbsp wholegrain Dijon mustard
~ 3/4 cup/200g vegan pepita mayo
*Alternatively chop in food processor or high powered blender.
Directions:
Mix all ingredients together in a large bowl.
