Gluten free zero-waste chocolate chip banana peel bread recipe created by me below.
Ingredients:
~ 3 small, very ripe organic bananas, peel & all (about 300g)
~ 10tbsp/140g butter, melted
~ 1 1/2 cups/300g sugar
~ 2 free range organic eggs, beaten
~ 1 tsp vanilla extract
~ 2 cups/250g flour
~ 1 tsp baking powder
~ 1 tsp salt
~ 3/4 cup/120g chocolate chips
Directions:
Purée bananas in blender until smooth.
Mix sugar & melted butter in a bowl, then add eggs, vanilla & banana purée.
Mix flour, baking powder & salt in a separate bowl.
Combine wet & dry mixtures & stir until smooth. Fold in chocolate chips.
Pour batter into greased loaf tin & bake at 375F/190C for about an hour, until tester inserted into centre comes out clean.
Let cool in tin for 10 minutes, then transfer to cooling rack.
