Gluten free healthy crock-pot sweet & sour shrimp with pineapple, recipe created by me below.
Ingredients:
~ 2 large carrots, peeled & sliced into coins
~ 3 mixed bell peppers, diced
~ 1 onion, diced
~ 1 pineapple, peeled, cored & cut into chunks
~ 3 cloves garlic, finely diced
~ 1 tbsp fresh ginger, finely diced
~ 1/4 cup low-sodium soy sauce
~ 2 tbsp agave
~ 2 tbsp Worcestershire sauce
~ 1 tbsp cider vinegar
~ 1 tbsp tomato paste
~ 1 pound/450g pre-cooked MSC cold-water shrimp
~ Sesame seeds, to top
~ Cooked rice, to serve
Directions:
Combine all ingredients except for shrimp, sesame seeds & rice in crock-pot & cook on low for 4 hours.
With 15 minutes remaining, stir in shrimp.
Serve over rice & top with sesame seeds.
